This chickpea salad is one of my favorite salads to make, and is a healthy side dish to any meal. It makes the perfect take-a-long dish to a cookout or a potluck dinner. I like to pair it with grilled chicken or salmon, and I’ve even eaten this salad with lamb burgers. Sometimes I make this salad and divide it into containers to take to work for several lunches. In the summertime, I use as many fresh ingredients as I can from my garden but over the winter months I tend to use grape tomatoes.
Ingredients:
-Rinse a can of chickpeas, and take off the skins if you wish or you can leave on for extra fiber.
-Dice a large tomato or use halved grape or cherry tomatoes, about 1 cup.
-Dice about 2 cups of cucumbers. You can use a large seedless cucumber, or several mini cukes.
-Dice up half a red onion, or use whatever kind you may have.
-Chop up a handful of fresh parsley and add it in.
-Drizzle with your favorite Italian salad dressing, and toss in some oregano, Italian seasonings, ground black pepper and salt to taste.
-Optional- throw in some kalamata or green olives and feta cheese!
Lightly toss all ingredients together and enjoy!
