What’s better than a one pan meal? How about one that’s also healthy AND low carb, not to mention delicious! At first I was leery about trying taco meat with cabbage, but I was pleasantly surprised how well the flavors meld together. If you like tex mex seasoning, try this easy to prepare skillet meal. This recipe serves 4, but if you have a family of big eaters you may want to double it. My husband and I devoured this entire pan full of yumminess!
Ingredients:
-one pound of ground meat (you can use ground beef, turkey, venison, or a plant based option to make the dish vegetarian).
-½ head of cabbage, about 3 cups, chopped into medium chunks
-½ cup of tomato sauce
-1 packet of taco seasoning of your choice
– 1 cup of water or broth (plus more as needed to add moisture if it gets too dry as you are cooking)
-1 cup of shredded cheddar (I prefer sharp cheddar)
-optional toppings: avocado, fresh tomatoes, onion, salsa, ranch dressing or sour cream.
Instructions:
In a large skillet, brown your meat over medium heat until cooked through and drain any grease. Add in the tomato sauce, chopped cabbage, taco seasoning, and a cup of water or broth. Cover and reduce heat to low, and cook for about 15 minutes, stirring occasionally. If it seems dry, add some more water or broth. Cook until cabbage is tender, then top with cheese. Add optional toppings like avocado, fresh tomatoes, onion, salsa, ranch dressing or sour cream when you are ready to serve. Let me know if you try it!
