Low Carb Buffalo Chicken Tenders

Chicken wing prices are currently very high. I decided to curb my buffalo wing craving by using tenders instead. These are quick and easy to make, and are delicious! This recipe fits into a keto or low carb diet if you are counting your macros. If you have people in your family who don’t like heat, you can omit the Frank’s Red Hot seasoning and sauce and serve with BBQ sauce, honey mustard, or a low carb sauce or dressing for dipping.

2 lbs raw chicken tenders

½ cup Italian dressing

½ cup grated parmesan cheese

½ cup fine ground almond flour

2 tsp Frank’s Original Red Hot SEASONING (not liquid)

Black pepper to taste

Cooking spray for baking sheet

Blue cheese or ranch dressing for dipping

Hot sauce for drizzling (I like Frank’s Red Hot)

Place tenders in a bowl and toss in Italian dressing. Mix dry ingredients together. Dip each tender in the dry ingredients to lightly coat and lay on a baking sheet sprayed with non-stick cooking spray (I prefer avocado oil spray because it does well at higher temperatures). Lightly spray the tops of the tenders with the oil. Bake at 400 degrees F for 20-25 minutes, or until the internal temperature reaches 165 degrees. I use a convection oven, and then finish under the broiler for a few minutes to crisp them up more. You can also make these in the air fryer, and they’re usually done a little faster. When you serve them, drizzle with hot sauce and have a side of blue cheese or ranch dressing for dipping.
