Pimento Cheese Spread

2 cups shredded extra-sharp Cheddar cheese

8 ounces cream cheese, softened

½ cup mayonnaise

¼ teaspoon garlic powder

¼ teaspoon ground cayenne pepper (Optional)

¼ teaspoon onion powder

1 jalapeno pepper, seeded and minced (Optional)

1 (4 ounce) jar diced pimento, drained

salt and black pepper to taste

On Christmas afternoon, I put out a mini charcuterie board with some meats, veggies, grapes, crackers, and pimento cheese spread for some snacking before the big meal. This cheese spread is super easy to make and is a delicious addition to my charcuterie basics. 

Start with 8 ounces of softened cream cheese, and add 2 cups of extra sharp shredded cheddar cheese. I used pre-shredded cheese in the bag, but you can eliminate the added preservatives by shredding your own. Add a half cup of mayonnaise and combine together. If you’re not a fan of mayo, you can replace it by using sour cream. Stir in garlic powder, onion powder, salt and pepper, and a dash of cayenne pepper (optional). Drain the pimento peppers and chop, then add to the bowl. Add your minced jalapeño and combine into the cheese.
