I’ve recently had red snapper for the first time, and it definitely won’t be the last! My husband picked up some fresh off the boat fish last summer, brought it home and immediately vacuum sealed it, and it’s been in the freezer ever since. Why did I wait so long to make this? I thawed the fish in the refrigerator overnight so it was ready to use when I was home from work. This was such a quick and delicious meal to make, with a simple fresh salad as a side.
Ingredients:
Red snapper filet (or use a white fish of choice)
2 tbsp melted butter
2 tsp minced garlic (more or less to taste)
Chopped parsley, about a handful
Lemon juice, from ½ a lemon
Salt and pepper to taste
Directions:
Line a baking sheet with foil and spray with cooking spray (I use avocado oil). Place red snapper filet on sheet and season with salt and pepper. Combine melted butter, garlic, parsley, and lemon juice then spread over fish filet. Bake at 400 degrees for 15-20 minutes, or until the internal temperature reaches 145 degrees. That’s it! Super simple and yummy 🙂
